Shrimp Po'Boys

...Weight Watchers Style....
Very good

2 tbs low fat mayo
1.5 tsp Creole seasoning, divided (I used Cajun)
4 French rolls (I used the Asiago cheese loaf from Atlanta Bread Co)
1.25 pound of shrimp, devinded and peeled
1 tsp olive oil
1 small onion, sliced
1 c of lettuce, shredded (I used spinach leaves)
1 tomato sliced

Mix the mayo and 1/2 tsp of seasoning and chill. Cook onion and shrimp in olive oil sprinkled with the remaining seasoning. Spread mayo on loaves, top with shrimp, lettuce and tomatoes.
